From below the rib section — the most richly marbled, deeply flavorful cut on the animal when cooked low and slow. Braise them in red wine for 4 hours or smoke them overnight. Short ribs from grass-fed Maine Anjou cattle are something else entirely — the collagen-rich meat falls off the bone and the broth they produce is extraordinary. About 8–11 packages per whole animal.
