The most tender cut on the animal. Located inside the loin — a muscle that does virtually no work — the tenderloin is lean, incredibly tender, and buttery in texture. Our AMAA genetics produce exceptional tenderloin. Best served medium-rare with simple seasoning. It needs nothing else. Limited: only 2 tenderloins per animal, approximately 12–14 packages per whole steer.
